Chicken Pakora – Gluten free

This is one for those of you who are on a gluten free diet. It uses Gram Flour instead of plain flour. Gram Flour is made from Chickpeas and can be found in some supermarkets, health food stores and Asian stores.

It makes a wonderful starter to any meal but works especially well if planning an Indian meal. Alternatively you can eat is as a main course or finger food if you choose.

Ingredients

Allergens : Gluten & Lactose Free
Chicken Breasts - 4
Gram Flour - 250g
Cracked Black Pepper - 3tbsp
Turmeric - 2 tsp
Salt - 1 tsp
Garam Masala - 1 tbsp
Ground Ginger - 2 tsp
Chilli Powder 1 tsp (optional)

Instructions

Getting Ready You will need - 1 deep fat fryer, deep pan or wok. 1 raw meat chopping board, 1 sharp knife, 2 medium bowls, 1 baking tray and baking parchment to cover.

Pre-Heat your oven to 180c GM4 and your fryer to 170c.

Slice the chicken breasts lengthwise into strips, you should get 6 out of each depending on the size.

Place these into a bowl and cover with cold water then set to one side.

Mix the gram flour, salt, turmeric and pepper in the other bowl.

One by one roll the chicken strips into the flour mix then place into the hot oil in the fryer, wok or pan.

Cook for 2 minutes until the coating is nice and crispy and starts to turn a deeper yellow.

Remove then place on the baking tray lined with the parchment.

Do this until you have used all the chicken.

Place in the oven for 10 - 15 minutes depending on how big you cut the strips.

Cut into the thickest part of the biggest one to ensure they are cooked through, there should be no pink or pink juices.

Serve with a nice salad and sweet potato fries.
