Smoked Salmon & Spinach Omelette

Omelettes are a great source of protein and a really quick and cheap meal. You can fill them with your favourite ingredients or just use what is to hand when you are making one. Smoked salmon and spinach are a delicious combination though the smoked salmon will put the price up a bit. I think it is well worth it and I bet you do too once you have tasted it in this delicious omelette.

Ingredients

6 eggs
200g smoked salmon
100g cream cheese
50g fresh spinach leaves
1 tsp coarse ground black pepper

Instructions

Pre-heat your grill to high

Break the eggs into a bowl and whisk well

Slice the smoked salmon and the spinach

Whisk everything in with the eggs.

Heat the oil on a non-stick pan then add the mix and give it a good stir then, when it starts to cook, smooth it out evenly over the pan.

Cook for 1 or 2 minutes then place under the grill until the top has browned slightly.

Serve hot or cold.

If you want to get the whole omelette onto a plate, place a plate on top of the pan so it covers the omelette. Then turn the pan oven and the omelette should come onto the plate.
