Time Plan & Methods

If you are following my Christmas Menu then this is the shopping list to match the menu.

It is entirely up to you where you get your ingredients from, though I recommend shopping local and supporting your local small retailers as much as possible. This isn’t possible for some so don’t feel one bit guilty if you have to get all the ingredients in a supermarket. Please, do try buy at least some of your ingredients from a local retailer. Butchers most often do locally sourced turkeys and hams so you are supporting a number of small businesses.

I break the list down into sections starting with how it is laid out in most supermarkets.

Make sure you choose ingredients that will stay fresh until you plan to cook them. Look for crispy veg with vibrant colours free of bruises. Make sure meat and dairy will be in date for Christmas and store them in your fridge until just before you cook them then once cooled when cooked.

This list is suitable for 6, change it to suit the number you are cooking for.

500g Brussels Sprouts

1 head of fresh cauliflower ( I prefer to use 2 bags of frozen cauliflower for cauli cheese)

5 carrots

2 parsnips

10kg bag washed rooster potatoes

2 kg baby potatoes or salad potatoes#

2 onions

4 lemons

1 bunch spring onions

2 cloves garlic

1 pack fresh sage (dried will do if you can’t get fresh)

1 pack fresh parsley

1 pack fresh rosemary



3 – 5kg serves 6 to 10

5 -7.5 serves 11 to 15

8 – 10kg serves 16 to 20


1 – 2kg serves 4 to 5

3 – 4kg serves 6 to 10

5 – 8kg serves 11 to 20

2 packs smoked streaky rashers (1 more for 5kg and up)

1 pack smoked bacon lardons

1 roll sausage meat (optional)

500ml full fat milk

750ml fresh cream (single)

1lb real butter

1ltr buttermilk

1 bag grated white cheddar, I like medium or strong for this dish.

1 cinnamon stick

3 star anise

4 bay leaves

6 cloves

2 ltr coke


Black pepper mill

English mustard

Gravy browning or use Bisto if you can’t find it, I struggle to get it at times.

6 vegetable or chicken stock pots

500g fresh breadcrumbs or make your own with fresh bread or gluten free bread.

Dried sage, if you couldn’t find fresh

Plain flour, use gluten free if needed

Olive or Rapeseed oil

Bread or bread rolls for the soup

For the Ham Glaze

Mix 1 tbsp English mustard with 2 tbsp honey and 1 tbsp brown sugar with 1/4 tsp ground clove the spread this on the ham as per the instructions in the time plan and cooking method on the next page.
