Cajun Chicken Burger
This is a quick and easy dinner that can be, mostly, prepared in advance then cooked when dinner times arrives. Simply marinade the chicken that morning or the night before the grill or pan fry when ready.
These Cajun chicken burgers go so well with my Crispy Sweet Potato Wedges
4 chicken fillets, butterflied. Lay flat and cut in from the side but not all the way through. See image in step 1 below.
6 tbsp cajun seasoning
2 peppers, roasted or sliced and grilled with the chicken.
1 large onion cut into rings and grilled with the chicken
2 tbsp smoked Paprika
1 tsp hot or mild chilli powder
1 tsp oregano
1/2 tsp White pepper
2 tsp garlic powder
1 tbsp tomato ketchup
5 tbsp mayonnaise
4 of your favourite burger buns or baps
1/2 iceberg lettuce or 2 baby gem shredded or broke into bun sized leaves.
Once you butterfly the chicken see image below. Coat each in cajun seasoning, don’t be afraid to use more or less depending on your taste.
25 minutes before dinner, preheat your grill to high.
Place the chicken, sliced peppers and onions flat on a grill tray and grill for about 4 minutes each side until cooked all the way through.
Mix the smoked Paprika, chilli powder, garlic powder, pepper and oregano with the mayonnaise and ketchup until smooth and free of lumps.
Toast the buns.
Spread some sauce on the base of the bun then place the lettuce on top followed by the chicken a dash of sauce then the peppers and onions topped with the bun lid. Enjoy 🙂
