
Cauliflower Cheese Soup

Cauliflower cheese is one of my favourite side dishes and one I make every time I make a roast dinner. One day I was thinking about soup recipes and came up with this. I am glad I did as it is so tasty and of course, like all my recipes, it is very easy and inexpensive to make.

Ingredients
1 head of cauliflower
1 onion
2 good sized potatoes
2 garlic cloves
1.5 litres of water
100g grated white cheddar cheese
1 or 2 vegetable stock cubes
½ tsp white pepper
100ml fresh cream
Instructions

Peel and chop the onions, potatoes and garlic then cut the cauliflower into small florets

Add these to a pot then add the water, bring to the boil and keep on a rolling boil for about 15 minutes or until the potatoes are cooked.

Add the cheese and allow it to melt into the soup for about 5 minutes stirring as it does.

Add the stock cube and pepper then blend with a stick blender.

Add the cream then taste, serve if happy or add more pepper and salt if needed.
Lovely recipe and very filling. I made it vegan by using vegan cheese (violife for pizza) and left the cream out (watching my cholesterol). I was tempted to add some freshly grated nutmeg, but it was tasty enough and I didn’t want to spoil the recipe.
Another winning soup, just had this today, quick to rustle up & extremely tasty 🙂
