
Chicken & Bacon in a Rich Cherry Tomato Sauce
Dinner doesn’t come much easier or tastier. This is a regular in my home as it is really quick and easy to do plus I usually have all the ingredients already.
I advise getting all the ingredients ready and have them to hand before you start cooking.
Use a tin of regular chopped tomatoes if you can’t find tins of cherry tomatoes. I found them in Dunnes, some Supervalu stores and in M&S stores though expect to pay a premium if you get them in M&S.

Ingredients
2 chicken breasts or 8 to 10 mini fillets.
Cut into small cubes.

4 smoked rashers, cut into small pieces
6 garlic cloves, finely chopped or crushed
4 – 6 spring onions, finely sliced
1 pepper of any colour, finely diced
1 tin cherry tomatoes or 1 tin chopped tomatoes
350 – 400g pasta of your choice, I used spaghetti.
Fresh parsley and fresh basil or 1 tbsp dried oregano. Dried basil is terrible. Roughly chopped
Fresh ground black pepper from a mill
Fresh Parmesan cheese, grated
1 tbsp good quality oil

Prepare all the ingredients as described in the ingredients list. Cook the pasta as per the packet then, when cooked, cool under cold running water. Set to one side.

Heat the oil in a pan then add the chicken and bacon, cook until the chicken starts to brown in places then add the peppers, onions and garlic and cook for 5 minutes more.

Add the tomatoes then the fresh, roughly chopped, herbs and a few twists of a pepper mill.

Add the cooked pasta and stir well. You can add the cheese now and mix it in or serve it on top of the dish when serving.

Serve when the pasta heats fully, about 5 minutes.
Great dinner, very tasty, even the kids loved it! We were 2 adults and 3 kids and I put in an extra chicken breast and used regular tin of tomatoes. Thanks BiaMaith.ie
