Chicken Fajita Sandwich Filler

So many people have gotten in touch asking for lunch recipes, many saying they are tired of the same old things week after week.

If you are feeding a family or just yourself it really is worth the effort to make a good lunch. Eating a good lunch to suit your lifestyle will help you get through your day with the energy your mind and body needs.

If mixed with the right exercise this helps to keep your mind and body fit and healthy.

Ingredients

200-300g leftover roast chicken or turkey. Or boil 2 breasts until cooked through see below.
100g creme fraishe
2 spring onions
1 pepper or a bit of each colour.
Handful baby spinach leaves
2 or 3 tbsp fajita seasoning. Most supermarkets do this, look for the Mexican stuff.
1 tbsp tomato ketchup

Instructions

Shred the cooked chicken into small pieces. Or boil legs or breasts in salted water with a bay leaf until cooked through cool then separate the flesh and shred it.

Chope the peppers, spinach and spring onions into very small pieces.

Mix all the ingredients together in a bowl until they are blended together.

Spread onto your favourite bread or wrap. Store covered in your fridge for up to 3 days.
