Creme Brulee

This simple desert is one you can easily make at home even if you have no cooking skills at all. The main thing is to take your time, read the recipe and follow each step esp when adding the hot cream to the eggs and sugar as it can easily split or over cook the eggs if added too quickly.



Cream - 500ml
Egg Yolks - 6
Caster Sugar - 75g + extra for the top
Vanilla Pods - 1
or Vanilla Extract - 2 tsp


Getting Ready... You will need - 1 Medium pot, 1 medium bowl, 1 grill or blow torch, 4 medium ramekins, 1 whisk, 1 wooden spoon, 1 wire rack, 1 deep baking tray or roasting tin and 1 sieve
Pre-heat your oven to 160c GM3
Place the cream in the pot and put on a low heat.
Split the vanilla pod in two lengthwise the using your knife scrape the seeds out and add to the milk. You can also add the remaining pod.
Mix the egg yolks and caster sugar in the bowl and whisk really well until well blended and almost fluffy.
When the cream is close to boiling pour it very slowly through the sieve into the bowl with the egg yolks and sugar mix. It is really important that you do it slowly and whisk continuously while doing so.
When done, pour the mix back into the pot and place back on a low heat whisking all the time for about 5 minutes until the mix starts to thicken and coats the back of the wooden spoon.
Place the ramekins in the baking tray or roasting tin the divide the mix evenly between each.
Pour enough hot water into the baking tray or roasting tin to half cover the sides of the ramekins then place in the oven and bake for 30-40 minutes.
The mix should be slightly wobbly like jelly when done.
Remove each ramekin from the tin, but be careful they will be very hot, then place on a wire rack to cool.
When cooled, coat the top of each with a light coating of caster sugar then use the blow torch to dissolve the sugar and for a caramel crust or if you don't have a blow torch, place under a pre-heated hot grill.
Allow to cool and store in the fridge until ready to serve.
