Fillet of Beef in Hot Garlic

This is one of my personal favourites. It is something I tend to order if ordering a take away. I stopped ordering the fillet of beef version as most times it wasn’t fillet steak as stated on the menu, so I ended up getting big slices of chewy beef instead of the melt in the mouth steak I was expecting and paid extra for. I am sure many of you reading this know exactly what I am talking about.

These days I tend to cook chinese dishes at home as there isn’t a good chinese near me, the times I am too busy to cook and end up getting a take away I am nearly always disappointed.

Like most of my recipes you will very easily throw this together in a few minutes and need no cooking skills to do it. All the ingredients can easily be found in your local supermarket and don’t cost a fortune esp if you change the fillet steak to chicken or leave the meat out and make it a vegetarian dish.

You can also use good sirloin, prawns or tofu if you prefer.

Ingredients

Allergens : Contains Gluten, Contains Nuts, Lactose Free
Fillet Steak - 450g
Red Peppers - 2
Spring Onions - 6
Onion - 1
Fresh Green Beans - 200g
Garlic Cloves - 6
Fresh Red Chilli - 1 or more if you like it hot
Roasted Peanut oil (Tesco) or use vegetable oil - 2 tbsp
Salted Peanuts (optional) - 2 tbsp
THE SAUCE
Rice Wine Vinegar - 4 tbsp
Tomato Ketchup - 2 tbsp
Fish Sauce - 2 tsp
Toasted Sesame oil - 2 tsp
Light Soy Sauce - 2 tbsp
Sugar - 3 tbsp
Water - 2 tbsp
Coarse Ground Black Pepper - 3 tsp
Cornflour - 2 tbsp

Instructions

Getting Ready ... You will need - 1 Wok, 1 small bowl or mug, 1 sharp knife, 1 chopping board and 1 ladle or wooden spoon.

Mix all the sauce ingredients together (leave the cornflour our for a moment) in the small bowl or mug then add the cornflour and mix really well until the cornflour dissolves.

Trim all the fat off the steak and slice into thin strips.

Cut the peppers and onion into small cubes the finely chop the garlic and finally slice the chilli and spring onions.

Take the ends off the green beans.

Heat the oil in the wok then add the steak and fry for about 2 minutes or until it is browned all over.

Add the garlic then cook for a further 30 seconds stirring all the time.

Add the rest of the veggies and give it a good stir then allow to cook for a minute before stirring again (add the peanuts now if using them) then allow to cook for 1 or 2 minutes more.

Add the sauce and stir again then allow to sit on a high heat for 1 minute.

Stir one last time, taste and serve with boiled rice if happy

VARIATIONS Change the Fillet Steak to Striploin, Chicken or Pork fillet, use the same amount so 450g. Then follow the recipe and method as written.

You can also change the beef to 24 or more king prawns.

Add a green and yellow pepper and any other veggies you may like and leave the meat out to make it a vegetarian dish. Baby corn is good if you can get it. Change the fish sauce to 1/4 tsp of salt

Tofu is great in this as it absorbs the flavours really well. Use 100 - 150g per person and add it when you add the veggies.

    Just eating this now ……. my favorite meal from Chinese is beef or prawn in hot garlic!!! The Chinese has lost a customer this is fab. Thanks Liam
