Chicken Sundried Tomatoes

Fillet of Chicken with Italian Vegetables and Sundried Tomatoes

This is one of 4 chicken dishes I made from one pack of chicken to show that you can make a different dish for everyone in the house with very little effort.

You will find, Breaded Chicken with Ham and Cheese here this was really popular with adults and kids, I must admit, I really enjoyed it myself ?

Bacon wrapped fillet of chicken with ricotta and basil here which is great for home catering as you can make them in advance, it’s guaranteed to impress.

Chicken Sundried Tomatoes

Ingredients

Allergens : Contains Gluten, Lactose Free, Nut Free
Chicken fillets - 1 per person
Red onion - 1
Breadcrumbs - 1 pack
Flour - 150g
Garlic clove - 1
Baby Spinach leaves - 6
Fresh basil leaves - 4 or 5
Pepper - 2 slices, any colour
Egg - 1
Sundried tomatoes - 3
Cherry tomato - 1

Instructions

Place the chicken breast on a chopping board then make a hole about 1 inch across in the inside side. Cut a cavity in the breast without making the hole bigger, this can take practice.

Coarsely blend or chop the basil spinach, garlic, peppers and tomatoes, hold some back if you want to make the butter, mix well then fill the cavity you made in the chicken with the mix.

Using 3 bowls (1 needs to be a bit bigger) Place the flour in one and season with pepper and a pinch of salt, crack the egg into another and beat it and finally put the breadcrumbs into the larger one.

Wear gloves for this if you have some.

Roll each breast in the flour first, coating it really well then dip in the egg then into the flour.

Take it out of the flour and put it back into the egg then back into the flour again. Patting the crumb on and shaping the chicken slightly with your hands.

☆ NB... don't use all the eggs and bread crumbs at once, I always keep some back to have nice fresh ones for each breast as I do it. Otherwise the last ones you coat with have clumps of crumbs.

Either deep fry this or pan fry it in hot oil until it is brown and crispy all over. Then bake in an oven 180°c for 25 or more minutes depending on the size of the breast, mine needed nearly 40 minutes.

Serve with a nice salad or veg and potatoes.

YUMMY EXTRA... Keep a little of the chopped sundried tomatoes etc and mix into some softened butter to make a really nice butter to serve with the dish.

WHEN TOUCHING RAW CHICKEN DO NOT TOUCH ANYTHING AROUND YOU BEFORE WASHING YOUR HANDS WITH ANTIBACTERIAL SOAP. YOU CAN SPREAD HARMFUL BACTERIA WHICH CAN MAKE YOUR FAMILY VERY SICK
