
Hearty Beef Goulash Soup

This is a really hearty soup that’s cheap to make and that can be thrown together in a few minutes. It’s perfect for a cold winter’s day or even a school or work lunch.

Ingredients
400 g lean beef strips, diced into small pieces
1 onion, chopped
1 red onion, chopped
2 cloves garlic, finely chopped
1 red pepper
1 green pepper
1 yellow pepper
2 tins chopped tomatoes
2-3 vegetable stock cubes
500 ml water
3 large spuds, peeled and cubed
handful of fresh baby spinach leaves
2 tbsp paprika
3 tsp smoked paprika
1 tsp ground black pepper
1 tsp chilli powder (optional)
2 carrots, peeled and diced (optional)
2 tbsp rapeseed oil
Instructions

Heat the oil in a large pot and add the beef, onions, garlic and carrots, if using them. Cook until the beef starts to brown.

Add the sliced peppers and cook for 2 minutes.

Add the paprika and ground pepper. Stir well.

Add the rest of the ingredients, except the spinach, and stir.

Bring to the boil and then simmer for half an hour, until the beef is tender.

Add the spinach just before serving and stir. Taste and serve if happy. This can be frozen for up to 2 months and is delicious with a hunk of bread.
