
Pancakes

What is better for breakfast or brunch than a lovely fluffy American pancake.. Very easy, cheap and quick to make you would be mad to buy the packer ones.
They go great with bacon and maple syrup or icing sugar and fresh berries like raspberries.
Make them bigger and thinner if you choose.
This will make 4-6 small pancakes, double the recipe if needed.
Use rice flour to make them gluten free.

Ingredients
Allergens : Contains Gluten & Lactose, Gluten Free Method Included
Plain Flour – 150g
Baking Powder – 1 tsp
Caster Sugar – 1 tsp
Eggs – 1
Milk – 150ml
Maple Syrup – To taste
Smoked Rashers – 2
Instructions

Getting Ready…
You will need – 1 non stick pan, 1 medium bowl, 1 whisk, 1 ladle, and 1 fish slice.

Add the flour, baking powder and sugar to the bowl, then add the egg and milk.

Whisk really well till free from lumps.

Heat your pan to a medium heat.

3/4 fill the ladle with the mix the pour into the center of the pan. Gently smooth it out until you get the desired size. I made mine a little smaller than the size of a saucer.

Cook for about 45 seconds per side until they start to turn a nice golden brown.

Grill or fry your rashers then serve on top. Pour the desired amount of maple syrup over the top and serve.

VARIATIONS

Use fresh blueberries and natural yogurt instead of the bacon and maple syrup. You can either serve the blueberries on top or place them on the pancakes before you turn them the first time.

Use fresh banana and creme fraiche or natural yogurt. You can either put serve the banana sliced on top or mash it and mix it through the batter before cooking.
