Pork, Chicken or Steak Fajitas

This is a great recipe as 2 pork chops will feed a family of 4. You can use more if you like but it really isn’t needed. You can also use chicken breasts or steak strips if you prefer or use more veggies to make it a vegetarian dish.

You can buy spice mixes in most stores but trust me, homemade is so much better and it works out cheaper in the long run especially if you make extra and store it in a sealed jar for another day.

GUACAMOLE recipe at the end of the method.




2 good sized pork chops, fat removed

or 2 large chicken breasts or 1 – 2 striploin steaks fat removed

1 red onion

3 peppers

½ red chilli

50ml water

2 tbsp tomato paste

2 tbsp oil

6 flour tortillas


1 tbsp smoked paprika

1 tbsp paprika

1 tbsp onion powder

1 tbsp ground cumin

2 tsp white pepper

2 tsp oregano

1 tsp salt

1 tsp cayenne pepper- more if you like it really hot

1 tsp mild or hot chilli

2 tsp English mustard powder



Mix the spice ingredients in a large bowl


Slice the pork, chicken or steak into thin strips then add to the spice mix and mix well.


Slice the peppers and onions.


Heat half the oil in a non-stick pan then add the pork, chicken or steak strips and cook for about 2 minutes. Remove from the pan and place on a plate or in a bowl.


Give the pan a wipe then add the rest of the oil and heat before adding the onions, peppers, chopped garlic and chopped chilli. Cook for 2 minutes stirring all the time


Add the pork, chicken or steak strips and the tomato paste and cook for 4 minutes more then add the water.


Simmer for 2 minutes then serve in flour tortillas


Optional – serve with sour cream, guacamole and topped with chopped coriander.


Mash 1 ripe avocado with 1/2 a chopped red chilli,1/2 a chopped red onion, a pinch of salt and white pepper and 1 -2 tsp of lemon juice. Taste and serve if happy.
