Simple Cajun Chicken (Gluten Free) with Video

This one is for those who don’t have a lot of time to cook yet want something really tasty.

Forget calling a take away and get stuck into this recipe, it takes about 10 minutes to make, 15 when you include getting ready.

It also used very few ingredients that can easily be found in any supermarket.

I prefer the Supervalu Cajun seasoning to the others, though that is just my personal preference. It is the same price as Aldi.

You can also use beef strips or diced pork for this recipe. Vegetarians can use extra peppers and add whole grilled mushrooms.

Ingredients

Allergens : Contains Lactose, Gluten Free
Chicken Breasts - 2
Onion - 1 medium
Garlic Cloves - 2 or 1 tsp minced garlic
Sweet Pepper - 1 or 175g ready roasted
Cajun Seasoning - 2 tsp maybe 3
Cream - 250ml
Olive Oil - 2 tbsp
Water (optinal) - 50 - 100 ml
Chicken or Vegetable Stock Cube - 1/4

Instructions

Getting Ready... You will need 1 Pan, Pot or Wok, 1 raw meat chopping board, 1 vegetable chopping board, 1 chopping knife, 1 office knife, 1 wooden spoon, 3 small bowls.

Using your raw meat chopping board and a sharp knife slice the chicken breasts lengthwise, place into one of the small bowls and leave to one side.

Clean your board and knife with boiling soapy water if you don't have another to do the veg on, this is to avoid cross contamination and to keep your family safe.

Using the clean board and knife or a dedicated veg board slice the onion, chop the garlic and slice the pepper lengthwise. If using raw pepper then put them all in the same bowl, if using ready roasted place the peppers in a separate one.

Heat 2 tbsp of Olive Oil on the Pan, Pot or Wok then add the onions and garlic and raw peppers if using them, fry for about 3 minutes.

If using ready roasted peppers add the onions and garlic to the pan and fry for about 1 minute.

Add the sliced chicken and fry for about 3 minutes then add the Cajun seasoning and mix well.

Add the roasted peppers if using them and stir, then add the cream.

Reduce for about 2-3 minutes until the sauce has thickened, check to see if the chicken is cooked, if so then taste the sauce.

Does it need extra seasoning? If so you can add the 1/2 stock cube or else a little salt and 1 tsp of Cajun seasoning.

Stir, taste and serve with rice, mash or chips if happy. Sweet Potato chips or mash is really good with this dish.

To spread this dish out further add more chicken and peppers then add some water rather than more cream. Coconut milk will be better value for a family than fresh cream, use 1 tin for 4 portions.

    I made this for tea this evening with some homemade potato chips in the air fryer there were no leftovers in fact there was a scramble to scrape the serving bowl!!! Definitely a hit and so quick and easy to make. Thanks for posting !!!

    I made this tonight as my substitute for our Saturday night takeaway. So quick and easy to make with all ingredients already in my kitchen. This dish was full of flavour. Thank you so much. For medical reasons I have had to change to a gluten free diet and your recipes are a culinary pleasure.

    Made this last night & used a tin of coconut milk instead of cream. A massive hit in our house, definitely will be making this again.
