Smoked Bacon & Mushroom Omelette

Omelettes are quick, easy and cheap, they make a great breakfast, lunch or even a dinner. If you are broke and looking for something simple to make that will fill you and your family then these are perfect though they are great to make even when you aren’t. The best thing about them is you can choose to fill them with just about anything you have in the fridge. Plain cheese or a bit of ham are great as are a variety of vegetables from broccoli to peppers or you can even leave it plain and add nothing but a bit of pepper and salt.

Ingredients

Allergens : Gluten & Lactose Free
Eggs (try use free range when possibe) - 6-10
Smoked Streaky Rashers - 4-6
Mushrooms - 300g
Spring Onions - 4
Fresh Basil leaves - 10
Grated Cheddar Cheese - 100 - 200g
Salt and Black Pepper - Pinch
Paprika (Optional) - 1 tsp

Instructions

Getting Ready... You will need - 1 non stick frying pan, 1 grill (optional), 1 medium bowl, 1 sharp knife, 1 choping board, 1 cheese grater and a fork.

Break the eggs into the bowl and whisk with the fork add the grated cheese and mix some more.

Heat the oil on the pan and pre-heat your grill to medium-high

Cut the rashers into slices as small or as big as you like and add to the pan

Halve the mushrooms and add these to the pan too.

Cook until the mushrooms and rashers are cooked, about 3 - 5 minutes.

Add the chopped spring onions and mix in.

Add the pepper, salt and paprika if using it and mix in.

Add the eggs and torn basil leaves and give it a stir until they start to slightly cook, they should be like undercooked scrambled eggs.

Place the pan under the grill and leave to cook for about 2 minutes until the top starts to brown.

Remove and serve in slices to suit.
