Tagliatelle, Shaved Asparagus and Poached Egg

This simple dish is very easy and quick to make and makes a great lunch. It isn’t at all heavy, in fact it makes a refreshing, tasty meal.

I used fresh egg pasta, you can use dried but try to get a good quality one if you do. Due to there being no sauce in the dish it pays to use a good quality pasta.

Fresh Tagliatelle – 400g (lunch portion) 500 – 600g (Dinner Portion)

Red Chilli – 1 -2

Fresh Basil – Good Bunch

Garlic Cloves – 4

Spring Onion – 4

Black Pepper from a mill – to taste

Salt – to taste

Fresh Parmesan Cheese – 50 – 100g

Fresh Asparagus – 200g

Good Quality Olive Oil – 30 – 50 ml

Eggs (duck eggs if you can get them) – 4

White vinegar (optional) – 1 tsp

Cherry Tomatoes – 10 – 20

Lime – zest and 2 tsp juice



Getting Ready…

You will need – 2 medium pots, 1 deep pan, 1 sharp knife, 1 chopping board, 1 peeler, 1 grater and 1 big metal or wooden spoon. (a tongs is always useful)


Cook the pasta as per the packet instructions. When cooked rinse under a cold tap until cool then drizzle a little olive oil on top and mix well to stop it sticking, set to one side.


Using your peeler to shave the asparagus. Do this by laying it down on a chopping board and peeling it like you would a carrot. keep the peelings and leave the tip as it is when you can’t peel anymore. Set to one side.


Put the second pot on to boil with the salt and vinegar if you have it.


Coarsely chop the spring onion, chilli and garlic then heat 3 – 4 tbsp of olive oil gently in the pan. Add the chopped ingredients and cook gently without colouring, 3 – 4 minutes should do nicely.


Add the asparagus shavings and cherry tomatoes if using them and cook for a further 1 – 2 minutes.


Coarsely chop the basil leaves and add these to the pan with the optional spinach, give it all a good stir then add the pasta and mix really well.


Add the lime zest and juice and mix some more.


The water in the second pot should be gently simmering, if so gently crack the egg over the side then place the egg in the water, leave it to cook for 2 minutes or 4 if you want it hard (I recommend soft for this dish)


Place the pasta in portions on plates or in pasta bowls then add a poached egg to the top of each, shave over a little parmesan and a twist of the pepper mill and serve.
