Thai Mango Salsa
This quick and simple salsa goes great with a curry, thai prawn crackers or as a side to my Thai Coconut Chilli Prawns.
You will throw it together in a few minutes. It is really refreshing, sweet with a nice salty heat kick at the end.

Fresh Mango - 1
Red Chilli - 1
Spring Onions - 3
Fresh Coriander - Small bunch
Thai Fish Sauce - 2 tsp
Soy Sauce - 1 tsp
Getting Ready... You will need - 1 chopping board, 1 sharp knife, 1 spoon and 1 medium bowl.
Peel the mango then slice it and dice it into small cubes as best you can then pop it in the bowl.
Chop the coriander, chilli (take the seeds out if you want it a little milder) and spring onion, then pop them in the bowl with the mango.
Add the soy sauce and Thai fish sauce and mix really well.
Taste, add more soy sauce or Thai fish sauce if needed.
