
Vanilla Panna Cotta
Panna Cotta is a very simple Italian dessert. If you can make a cup of tea then you can easily make these.
You need something with them as they are a bit plain on their own hence the sauce. You can also change the frozen berries for fresh raspberries or passion fruit.

Ingredients
Cream – 250ml
Milk – 250ml
Caster Sugar – 30g
Vanilla Pod – 1
OR
Vanilla Extract not Essence – 2 tsp
Gelatine Leaves – 3 – 4
The Sauce
Mixed Frozen Berries – 150 – 200g
Caster Sugar – 125g
Water – 50ml
Fresh Mint – 5 leaves

Getting Ready…
You will need – 1 medium pot, 1 wooden spoon, 1 sharp knife, 1 whisk, 1 chopping board, 6 ramekins or 1 silicone mould and 1 soup bowl

Separate the gelatine leaves and place each in the soup bowl with cold water.

Cut the vanilla pod in half lengthwise, then using the knife scrape the little black seeds out and pop them into the pot with the milk, cream and sugar, then pop the actual vanilla pod in as well.

Heat slowly until just short of boiling then squeeze the water out of the gelatine and pop them into the pot whisking all the time. Keep whisking for about a minute until fully dissolved.

Pour the mix into the ramekins or silicone mould then allow to cool before placing in the fridge for a minimum of 2 hours.

Give the pot a quick wash then pop the sauce ingredients in making sure you chopped the mint. Bring to the boil then simmer for 2 minutes. Taste, it may need more sugar or a few more mint leaves.

When set turn the panna cottas out of the mould or ramekin. Place on a plate or in a bowl.

Spoon the sauce and berries around then serve.
